Handy thing to have in the store cupboard, this: an aged balsamic vinegar from a well-respected family producer in Modena, northern Italy.
Okay, it’s not quite the quality of a Tradizionale, but at a fraction of the cost, so not to be sniffed at (although it does smell amazing).
Lovingly nurtured for at least 12 years in traditional wooden barrels, it has good depth, an incredibly intense flavour and excellent balance between the sweet and the sour.
It’s great lightly drizzled over salad leaves, grilled fish & steak, rare roast beef, shavings of parmesan, blue cheese, salami, and mushrooms.
